3-4 medium potatoes
1 medium onion
4-5 dried figs soaked in water
2 cloves garlic
1 coffee cup red wine
3 tablespoons olive oil
plenty of sage
1 bay leaf
1. Wash the potatoes well as it is with the peel and chop. Do the same for the apple. Peel the carrot and cut into strips. Peel and chop the onions into pieces as in tomato and garlic slivers.
2. Put them all in a pan and add all the spices and all remaining ingredients. Add some water.
3. Mix well and put them to oven at 220 degrees for about one hour til it’s done. Stir occasionally and add if you need more water.
You can serve with a few drops of lemon and fresh parsley.

If you do not have the figs you should try to add something similar because it is quite important for the recipe as gives a special taste and juice to the potatoes. If you do not add them , then do not add so much carrot. You might have problem finding some of the herbs. If you do not find something of them like theme or parsley it will be ok, but try to have herbs in your kitchen especially if you are vegetarian! But even if you are not, herbs are very healthy and can offer many different and special options to the food.
